I've decided to try to lead a more meat less life. I'd started with baby-steps by first starting with Green Smoothies. It is my morning breakfast/routine and usually consists of baby spinach, rice protein powder, chia seeds, a banana, coconut milk as a base and some variant of sweet fruit. Right now, I'm loving this combo with blackberries. It tastes like dessert!
Then for lunch and dinner I'd have salads or some cooked veggies..but I have to admit that has gotten so BORING!! Although, I feel better than I have in my entire life, my taste buds are threatening a revolt.
Imagine my delight when I happened across this absolutely delicious looking and sounding recipe from Big Girls, Small Kitchen.
It's a Roasted Eggplant sandwich, with White Bean Spread and Chive Pesto.
YUMMY! I'm heading to the supermarket now.

I've had a sandwich with eggplant before, and it was kinda tasty. I don't know about the green smoothie? It's something about drinking something green

You're so funny! I think the green is what intrigued me.. I like how people wonder "what the hell?" when I take my smoothie out on errands. lol
When adding fruit to it, it masks any spinach-y taste.
I'd love to try that smoothie and congrats re the path to meatless. Also, that eggplant sandwich does look yummy.
Luv your post about your green smoothie; it actually look appetizing. When I was little, my mom used to make me drink blended carrot, spinach and apple (it's a brown-ish kind of color, rather gross, but surprisingly tasty).
To tell you the truth, I'm not a vegetarian but I almost lead a vegetarian life because I seldom eat meat. I think how I made that switch is that I loooove carbs. And because everyone stresses that carbs are bad for you, I guess over time I just subconsciously made the decision to always pick carbs over meat (since eating both at the same time is a bad idea). So I guess I'm saying that trying to switch to meat-less meals might be difficult if you don't have a replacement food readily available. If you ever get a meat craving, you might binge more on it than you normally would. Anyway, let me know how it goes with your diet! I'm always interested in learning about how other people eat, especially when it's a healthy diet!
